Aviyal is a Kerela style curry which is made with lots of vegetables simmered in coconut based curry. It is very simple and low spiced. Usually eaten with rice, this curry can be dry or thin. The vegetables which can be added to the avial are raw plantains, potato, colocasia, beans, cluster beans, yam, pumpkin, ashgourd, chow chow, carrots, drumsticks, green beans etc.
Avial is said to be first made by Bhima from Mahabharata times, so this dish is a inherited recipe and is made on all the big and small occasions in Kerala. This curry is very flavorful and healthy. You can also see Mix veg saagu, beetroot rice, carrot rice, ash gourd curry etc.Yum

Ingredients
Vegetables
- 1/4 cup Drumsticks (सहजन की फली)
- 1/2 cup Pumpkin (कद्दू)
- 1/2 cup Carrots (गाजर)
- 1/2 cup Chow chow (चाउ चाउ)
- 1/2 cup Potato (आलू)
- 1/2 cup Raw banana (कच्ची केला)
- 1 tsp Salt (नमक)
- 1/2 tsp Turmeric Powder (हल्दी पाउडर)
For the paste
- 1/2 cup Fresh Coconut (ताजा नारियल)
- 1 tsp Cumin seeds (जीरा)
- 1 Green Chili (हरी मिर्च)
- 2-3 Shallots (छोटे लाल प्याज)
For tempering
- 2 tbs Coconut oil/Vegetable oil (नारियल का तेल)
- 10-12 Curry leaves (करी पत्ते)
- 2 Whole dried red chilies (पूरे सूखे लाल मिर्च)
- 1 tsp Mustard seeds (राई)
Method (Step By step Avial/ Aviyal recipe with pictures) :-
1. Cut all the veggies in long thick pieces like french fries.
2. Take a skillet and boil 4 cups of water. Add salt, turmeric and all the veggies in it.
3. Make a paste of coconut, green chili, onions and cumin.
4. When veggies become half done, add the coconut paste and stir it well. Add few curry leaves and let it simmer till veggies are fully cooked.
5. Now take a tempering bowl, add oil, mustard seeds, curry leaves and red chilies to it. Heat it till mustard seeds crackle. Switch off the flame and add it to the aviyal.
6. Give it a quick mix and serve this aviyal with rice.
Notes :-
- Use the combination of veggies you like.
- You can also add some grated raw mango for tanginess or some blended curd at the end.
- Make it dry or curry style whichever you prefer.
- Addition of shallots is completely optional and depends on choice.
