Mixed Vegetable Saagu is a Karnataka style mix veg curry which is served with poori or set dosa. I first had saagu at MTR in Bangalore. It is a combination of coconut, mint, spices and lots of vegetables. It tastes so good with puri or white rice. If you like South Indian food and taste of coconut based curries, this one should definitely be there in your menu.
It is also very healthy and light on your stomach. In karnataka people make it almost every week. This vegetable can be made with one vegetable also, potato saagu is also very popular. Use combination of vegetables that you like. Some of the vegetables that can be used are chayote squash, various squashes, pumpkin, carrots, plantain (raw banana), green peas, brinjal, french beans, potato, yam etc.
You can also try palak paneer, baingan ka bharta, butter paneer masala, white pumpkin curry, sarson ka saag, methi matar malai, matar paneer etc. Yum

Ingredients
For the Vegetables
2 cups Mixed chopped vegetables in cubes (chow chow, carrots, raw banana, green peas, pumpkin, brinjal, potato)
1/2 tsp Salt (नमक)
1/2 tsp Turmeric (हल्दी)
1 Onion chopped (प्याज)
1 Tomato chopped (टमाटर)
1/2 tsp Turmeric (हल्दी)
1/2 tsp Red chili powder (लाल मिर्च पाउडर)
1/2 tsp Salt (नमक)
2 tbs Coriander leaves (धनिये के पत्ते)
For the Seasoning
2 tbs Oil
1 Bay leaf (तेज पत्ता)
2 Dried whole red chili (पूरे सूखे लाल मिर्च)
10-12 Curry leaves (करी पत्ते)
1 tsp Mustard seeds (सरसों के बीज)
1/4 tsp Chana and urad dal
For the paste
1 cup Mint leaves (पुदीना)
1/2 cup Chives (optional)
1 tsp Cumin (जीरा)
1 Clove (लौंग)
10-12 Peppercorns (काली मिर्च)
1 piece Cinnamon (दालचीनी)
1 tbs Poppy seeds (खसखस)
5 Garlic cloves (लहसुन)
1/4 inch Ginger (अदरक)
1 tsp Coriander powder (धनिया पाउडर)
1/3 cup Fresh coconut (ताजा नारियल)
2 tsp Roasted chana dal (भुना हुआ चना दाल)
1 pinch Cardamom powder (इलायची)
2 Green chili
Method (Step by Step Mixed Vegetable Saagu Recipe) :-
1. First of all cut and prepare all vegetables, take a pressure cooker and add vegetables to it, 1/2 tsp salt and 1/2 tsp turmeric, 1 cup water and take two pressures. Switch off the cooker and let it cool.
2. Meanwhile take all the ingredients of making paste in a grinder and grind very fine.
3. Take a skillet and add all seasoning ingredients in it. Put it to heat, when mustard seeds start spluttering add onions to it. Saute them till translucent (for 2-3 minutes)
4. Add tomatoes and cook till tomatoes are little soft. Add red chili powder, remaining turmeric powder and salt. Cook for 1 minute.
5. Add the prepared mint coconut paste to the tomatoes and cook it on medium flame while stirring occasionally till a boil comes.
6. Now add boiled vegetables and add water according to the consistency desired (I added 1 glass water). Take a boil and add coriander leaves to it. Switch off the flame.
7. Mixed vegetable saagu is now ready to be served. Serve it with poori, set dosa rice.
Notes :
- You can substitute mint with coriander also.
- Instead of chives, spring onions can be used or you can avoid them all together.
- Season with cashews to give it some richness. Yum
