Kuttu ka halwa is made from kuttu ka atta i.e. buckwheat flour. Kuttu or buckwheat is gluten free and is consumed mostly during fasts in India. It does not fall in grain category and hence is deemed fit for consumption during fast or vrat. It can also be consumed by people having gluten allergies. Buckwheat is a very low calorie food. It is a rich source of of protein, dietary fiber, vitamins and several dietary minerals.
Kuttu ka halwa is a really good choice for people with sweet tooth during fast. Instead of kuttu you can also prepare this halwa from singhare ka atta (water chestnut flour) or rajgiri ka atta (amaranth flour) or you can use combination of any three of these flours. This halwa recipe is same as besan ka halwa or atta ka halwa. This can be prepared very quickly and but stirring continuously is very important to avoid lumps. This North Indian sweet is perfect for any religious fasting like navratri, ekadashi or shivratri.

Ingredients:
1/2 cup Kuttu ka atta(buckwheat flour)
1 1/2 tbs Rajgiri ka atta (amaranth flour)
2 tbs Desi ghee (clarified butter)
1/2 cup Sugar
a pinch Cardamom Powder
1 tsp Dry nuts (to garnish)

- Prepare ingredients first. Very important as this recipe requires continuous stirring.

2. Now in a pan keep 1 1/2 glass water to heat. Take a skillet, put ghee, melt it, add both the flours and roast it till it changes colour to dark.

3. Now keep stirring from one hand, and pour hot water from other, lots of steam will release so your spoon should be big so that you dont burn. When mixture dries add sugar and cook till it leaves ghee and shines.

4. Add cardomom and mix. Take out halwa in a bowl and garnish with dry nuts of your choice. You can also set it like barfi and cut into pieces when it cools down. Kuttu ka halwa is ready to eat.
